Healthy Chocolate Yule Log

We’re counting down the days until christmas, it’s a great time of year as we’re surrounded by our family and friends, and also the delicious seasonal foods. This year try a healthier xmas by making this low carb yule log which is packed full of protein. You’ll be avoiding the added 350 calories per slice if you buy a shop brought yule log. Although you won’t be able to make everything healthy, you can make certain favorites to help to avoid piling on the extra pounds.

Ingredients:

  • 170g of sweet potato, boiled and then mashed
  • 2 scoops of chocolate whey protein
  • 1 egg
  • 1 egg white
  • 46g of smooth nut butter
  • 50g greek yoghurt
  • 1 scoop coconut flour
  • 2 heaped tablespoons of unsweetened cocoa powder
  • 1-2 tablespoons almond milk (depending on consistency)

Time: 40 Minutes

Calories: 157 Per Slice

Yeild: 1 Log

Method:

Preheat the oven to 75 degrees C.

In a large bowl, combine all the dry ingredients for the yule log and mix

In a separate bowl, combine all the wet ingredients and whisk together.

Pour the wet ingredients into the dry ingredients and whisk together thoroughly until smooth.

Line a flat rectangular baking tray with greaseproof paper, pour the mixture into the tray and use a spatula to spread out the mixture evenly to create a thin layer.

Place the tray into the oven for 10 minutes. The cake has to be very moist to be able to roll, so avoid overcooking; so keep checking throughout the 10 minutes.

Then remove and check the centre is cooked using a thin knife.

Once removed, whilst the cake is still hot, spread over your filling and then carefully using baking paper, roll up your yule log. If the cake splits don’t worry you can patch this up with the chocolate topping.

Next, melt the dark chocolate over a pan of boiling water and cover the entire sides, covering any breaks or cracks.

Repeat this twice to ensure that your log has a thick outer layer of dark chocolate on it. Then pop it into the fridge to set.

Keep checking the cake as it hardens, you want the chocolate to be almost set so you can create the bark effect. Once it is almost set, use a fork to create the swirl bark detail and then pop back into the fridge for it to fully harden.

Take the cake out of the fridge, it is now ready for decorating. Add any toppings you wish and then use a sieve to dust the calorie-free icing sugar over the top to create the snow effect.
