Recipe: Chicken, Chickpea and Tomato Traybake
This is my favourite warming dinner option, it’s a one-pan wonder and also works great for meal prep if you’re eating for one!
- 1 pack of raw diced chicken breast
- 1 red onion, finely chopped
- 3 garlic cloves, crushed
- 2 chopped sweet peppers
- 2 courgettes
- 1 x 400g tin of chickpeas, drained and rinsed
- 1 x 400g tin of chopped tomatoes
- Mixed herbs
- salt and black pepper
Preheat the oven to 180°C.
Put the chopped onion, garlic, courgette, pepper, and chicken breast strips into a deep dish tray.
Add a splash of olive oil, salt, pepper and mixed herbs and mix well.
Add the drained chickpeas and chopped tomatoes and mix together thoroughly.
Roast in the oven for 30-45 minutes, until the chicken is thoroughly cooked and the vegetables are softened. You can serve with brown rice, sweet potato wedges or just eat it by itself!
