Recipe: Miso Cod
A surprisingly easy yet delicious recipe – great if you want to impress someone, while also having a nutritious meal! Think about serving this with brown rice and Asian vegetables.
- 2 cod loins
- 2 tablespoons miso paste
- 1 tablespoon mirin
- 2 tablespoons soy sauce
- 1 block ginger, finely sliced
- 2 spring onions
- 1 teaspoon sesame oil
Mix together the miso, mirin, soy, sesame oil and ginger in a small jar until it becomes a well-mixed paste.
Spread the miso mix on top of the cod loins, then sprinkle over the chopped spring onions.
Bake for 10-12 minutes. I recommend serving with some rice and tenderstem broccoli!
