Recipe: Teriyaki Salmon with Noodles and Stir Fried Vegetables
A fantastic weeknight dinner recipe, super quick and nutritious for the whole family!
Serves 2
Ingredients
- 2 salmon fillets
- 2 nests of egg noodles (or your preferred noodles – we love buckwheat too!)
- 2 spring onions
- 2 garlic cloves
- 1 red pepper
- A handful of frozen peas
- Half a pack of chestnut mushrooms
- 2 tablespoons teriyaki sauce
- 1 tablespoon mirin
- 2 tablespoons soy sauce
- Sesame seeds to top
Method
Place the salmon in the oven covered in teriyaki sauce, topped with chopped spring onion and sesame seeds. Cook for 15-20 minutes.
Meanwhile, chop up the spring onions and fry in a wok or large pan with oil until browned.
Add the garlic cloves and fry for a few minutes, before adding all the veggies.
While the vegetables are softening, cook the noodles in a saucepan according to the directions.
Once the noodles are cooked, add them to the vegetables with soy sauce, mirin and some teriyaki sauce. Mix well.
Serve onto a plate and top with the salmon fillet.
